Lunch In A Hurry

from Chris Pavesic This dish makes a quick and easy lunch. No stove or oven required!

 
Tuna Hummus Pita Sandwich

 1 5 oz. can tuna in water
 1 tbsp. lemon juice
 1 tbsp. red onion, chopped fine
 ⅓ cup cucumber, chopped
 1 tbsp. chopped parsley
 1 tbsp. golden raisins or dark raisins
 3 tbsp. hummus, divided
 1 mini whole-wheat pita
 Parsley leaves, for garnish

 Drain tuna then scoop into a bowl. Mix in lemon juice, onion, most of the cucumber, chopped parsley, and raisins.

 Split pita in half horizontally so there is a top and bottom. Spread each half with hummus. Top with tuna salad. Garnish with remaining cucumber and parsley. Enjoy!

Above the tree line floats an airship close to three hundred feet long with a slightly rounded wooden hull. Ropes attach the lower portion of the ship to an inflated balloon-like aspect, bright white in color with an identification symbol, a red bird with white-tipped feathers extended in flight, inside a round yellow circle in the center of the canvas. The deck is manned with archers and swordsmen. There are two sets of fore and aft catapults.

What I don’t see are cannons or any other type of a gun large enough to account for the sound of the explosion.

The ship pivots in the air, coming around to point directly at what looks like an oncoming flock of five large birds. Or creatures. They are too big and too strange looking to be birds. They drift closer, flapping their wings.

A moment passes before I realize that they are not creatures either. They are some sort of gliders. A person hangs below each set of the feathered wings, which flap and move with mechanical precision in a sky washed out by the morning sun.

The archers nock their arrows and aim at the flock.

The gliders draw in their wings and dive toward the deck, covering the distance in a few heartbeats. Most of the arrows fly uselessly past the attack force and fall like black rain from the sky. The archers aimed and released the volley too late.

The forward catapult releases a torrent of small rocks at the lead glider. It is a scatter-shot approach that proves effective. There are so many missiles that it is impossible to dodge them all.

But at the moment the stones strike, the other four let loose with fireballs. Spheres of crackling flame spring from their hands, glowing faintly at first and then with increasing brightness. The balls of fire shoot from their hands like bullets from a gun and fly toward the ship, exploding. Pieces bounce off the hull and fall to the ground, throwing hissing, burning globs of magic-fueled fire in all directions, setting everything they touch aflame.

Best-Ever Sheppard's Pie

Weekends at our house are reserved for old stand-by meals that are perfect for any family members who happen to ‘drop in’ unexpectedly. You know who I mean. Those adult kiddos who were in the neighborhood checking out garage sales or friends who pop by just to see what project you’ve been working on lately. Yeah, them. One dish that everyone seems to magically appear for is our scrumptious shepherd’s pie. Easy to prepare, and makes 6 servings, I guarantee your guests won’t go home hungry. Add a tossed green salad on the side, and a chilled bottle of beer or glass of wine, and they just may overstay their welcome.
    
Scrumptious Shepherd’s Pie
1 lb. (454 g) ground beef
1 cup chopped onion
1 tsp. seasoned salt
1¼ cup frozen peas and carrots, cooked and drained
1 package brown gravy mix (0.88 ounces/25 g)
1 cup water
1 egg, beaten
3 cups, mashed potatoes
Paprika

Preheat oven to 400° F (200° C).

Fry ground beef and onion over medium-high heat until beef is browned. Drain fat. Add seasoned salt, peas and carrots. Mix well.

Prepare gravy mix with water according to package directions. Add some gravy to beaten egg. Gradually add egg-gravy mixture to gravy, stirring constantly. Combine gravy with meat.

Pour meat mixture into a shallow, ovenproof dish. Spoon potatoes in mounds over meat then use the back of a large spoon to blend the mounds. Sprinkle top with paprika.

Bake uncovered for 15 minutes or until heated.

While you’re waiting for your slice of mouth-watering, meaty shepherd’s pie to digest why not put your feet up and relax on the couch with a good book? Just In Time For Breakfast...

Fill your home with the beautiful aroma of fresh baked coffee cake. This recipe is easy and oh so tasty you'll want to make it often.

Cranberry Walnut Coffee Cake
2 cups all-purpose flour
3 tsp. baking powder
¼ tsp. salt
2 tbsp. sugar
2 tbsp. olive oil
⅔ cup milk
1 egg
⅔ cup canned whole berry cranberry sauce

Olive or avocado oil to grease the baking dish

Topping
½ cup chopped walnuts
⅓ cup packed brown sugar
½ tsp. ground cinnamon

Glaze
1 cup confectioner sugar
2 tbsp. milk
¼ tsp. vanilla extract

Preheat oven 400° F.

In a large bowl, combine egg, milk, and oil. In medium bowl combine flour, baking powder, salt, and sugar. Stir contents of both bowls together.

Pour into a greased baking dish. Spread cranberry sauce over batter.

In small bowl combine topping ingredients. Sprinkle over cranberry sauce.

Bake for 18 – 23 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

In a small bowl, combine the glaze ingredients then drizzle it over coffee cake.

A Shout Out to Chocolate Lovers

Morning or afternoon, everyone. I want to share this chocolate hummus dip/spread recipe with you. The photo is stock because I kind of made a mess in my kitchen and the picture I took doesn't look as appealing as this one. Maybe because I couldn't stop taking spoonfuls out and shoving this mixture into my mouth. LOL Anyway, while I've made hummus before, I've never made a chocolate version. Already I think it's fabulous on the chocolate chip pancakes I also made this morning. Next, I’ll try it on toast for lunch today.

On A Side Note - I am a girl who likes to freeze things, and pancakes are no exception. Package them in twos, or enough for one serving, with a parchment sheet in between them. This makes it easier when you want to separate them later. To reheat, pull them apart, and either throw them in a frying pan, or on a plate and slide them into the microwave oven for 2 minutes. Easy peasy.

Back to the hummus. Here's the recipe for the healthy version I make.

Chocolate Hummus
15 oz. can of chickpeas
2 tbsp. aquafaba (chickpea water)
½ cup cocoa powder
¼ cup maple syrup
½ cup peanut butter
1 tsp. vanilla extract
½ tsp. salt

Open a can of chickpeas and save 2 tablespoons of the water, also known as aquafaba, then drain the can.

Add chickpeas, aquafaba, and the remaining ingredients to a food processor. Blend until smooth.

Since I have your attention, I'd like to announce my latest Halloween children's book - A Haunting Birthday Party available on Amazon. This is the second children's book I've written with a Halloween theme. A Halloween Party was book one.

As I promised my grandchildren, and others who truly enjoyed the first Halloween Children's Book, this one also contains silly character names. Example: Harry Pitts (harry arm pitts) is the narrator in this book, and the birthday party is for Peppa Roni and her twin brother, Reece A. Roni. It takes place at the Ray Zen (raisin) Restaurant, where people like Judge Mental and his wife, Judy, are enjoying a lovely meal. Kitti Letter (kitty litter) is the waitress for that side of the room, and her job is to give all the kids a spooktacular evening. Walter Melon (water melon) is the magician, Eve Ning (evening) is the cashier, Miss Turi (mystery) is another waitress, and Mr. I. Ball (eyeball) is the manager of the restaurant.

As you can see, this is a fun treat for young and old alike. I'm excited for the world to see my second Halloween children's book.


The story is about Peppa Roni and her twin brother, Reece A. Roni and Reece are having their 9th birthday party in the neighborhood restaurant.

The storyline is quite charming, and because you will try to figure out the double meaning of the fun names while you read, this is bound to become your child’s favorite book.

This delightful paperback book is another wonderful collaboration from writer Tina Nykulak Ruiz and illustrator Ishika Sharma. This creative duo knows how to put life and fun into children's books to encourage young people to read. As with all of Tina's children's stories, there's a moral at the end.


Tina Ruiz was born in Germany, but her family moved to Canada when she was in grammar school. She began writing children's stories when her own were little. Through the years Ruiz wrote twenty-seven books. Most of those stories went into readers for the Canada Board of Education. Two did not. Mayor Shadoe Markley is a story about a ten-year-old girl who becomes Mayor for a Day through a contest at school.

Little did Ruiz know that story would “change the world.” The book came out at early January 1988. By the end of that same month, everyone was calling the mayor's office at City Hall, trying to get the forms to fill out so their children could participate in the contest. Thirty years later that same contest is still runs at full speed. And not only in Calgary, but all across Canada. The Mayor's Youth Council is now in charge of the celebrated contest and invites Ruiz to attend and meet the lucky winner. It's usually followed by a hand-written thank you card from the mayor himself. Recently Ruiz was invited to be part of the Grand Opening of Calgary's New Library where the mayor shook her hand and introduced her to the attendees.

Tina has worked in television and radio as well as being a professional clown at the Children's Hospital. She lives in Calgary with her husband who encourages her to write her passion be it high-quality children's books or intriguing romance.

Bird Tales, Mystery and Romance

Nature and the Birds. Nature fascinates me, but I confess I lived in Alaska for four years and never once thought to use my binocs on a perching bird. We were all into whales, moose, goats, eagles and such like. The big stuff. I weep thinking how I missed puffins. Right away I want to recommend a book whether you are new to the hobby or an old hand, “The Crossley Guide of Eastern Birds.” (or go to the library.) You’ll need to look for a similar copy for your area, i.e. Western. The pictures are exquisite. For ordinary daily bird identification, I use an Audubon Society Guide to Field…whatever nature interest you. These books are terrific Christmas or Birthday presents for any age. I keep one in my car and another in the house.

We only feed backyard birds in the winter. Coons and other type creatures (rodents) are abundant in the summer months, plus the birds find plenty of food available. Occasionally the weather warms and we are visited by every gray (a few red) squirrels within a mile. Otherwise they are tucked away until spring. Last Christmas our daughter gave us a fool proof squirrel bird feeder. I swear it works. Has a small motor. When the When the squirrel climbs aboard, it triggers the motor which starts the perch twirling. We applauded one squirrel who managed to hang on by one paw for three revolutions although perhaps the poor fellow would need a bit of physical therapy afterwards.

After surgery when I was confined for a time, my hubby mounted small plastic feeders right to my window. It was fascinating to a shut-in like me. Highly recommend.

Lots of different selections of bird seed. Expensive and the best is black sunflower seed. We even had a young deer climb up on the deck to reach the spilled seed. Types of field glasses are many and varied. You’ll find the ones that you like best. Cornell Lab in Ithaca, NY has great birding information and sites. Do indulge.

SANDPIPER AFFAIR, the first of the Abby and Adam Adventures, was my love affair with nature. I only sort of wrote a story to go with it. There I have confessed. Actually, I created a nature photographer and a park ranger who allowed me to follow them around as they lived out their lives in Middle Florida. Who knew we could all have so much fun? It is a romance and a mystery as well. If I have tickled your curiosity regarding the environment, I am pleased. If you enjoy the story as well, I am ecstatic.

Busted in Bird land. Still...what a calendar he would make with that uniform, that smile, those shoulders. She stifled a sigh of pure visual pleasure.

You had better stop it, Miss Smarty. He has the authority to fine and kick you out of the park permanently if he so chooses. Holy Moly-- love a uniformed hunk!

Stoppit!


She stifled a giggle which was riotously rolling around deep inside her, threatening to break out. He continued to loom, gazing thoughtfully while she fidgeted in her warm nest sheltered by the dune. Surrounding them, the sporadic wind blew the smell of something baking in the sun. With her face turned upward and her eyes half-closed against the glare, she awaited her fate. She offered a weak smile while trying to bring into focus his face which was back lit by the bright sunlight. It couldn't hurt, she thought, and tried for puppy dog eyes pleading for mercy.

"Leave this area, and I'll forget your lapse of good manners--this time. Don't let me catch you trespassing on restricted lands again. This is a nature preserve. Visitors may not wander about-- especially during nesting season," he added giving her a stern look. "And that goes for well-meaning, good-looking, lady photographers as well."

Beat the Heat Summer Soup

When the days are muggy and hot, cool down with this light and refreshing meal. Add a loaf of crusty fresh bread and a bottle of chilled, crisp white wine to make dinner complete.

GAZPACHO - Cold Fresh Vegetable Soup

1 large cucumber, peeled and chopped
5 medium Roma/plum tomatoes, peeled and chopped
1 large onion, chopped
1 medium green pepper, seeded and chopped
1 tbsp. garlic, chopped fine or pressed
4 cups French or Italian bread chunks, crust removed
4 cups cold water
¼ cup red wine vinegar
2 tsps. salt
4 tbsps. olive oil
2 tbsp. tomato paste

Combine cucumber, tomatoes, onion, green pepper, garlic, and bread in a large bowl. Stir in water, vinegar, and salt. Ladle mixture into a blender or food processor. Be careful not to overload either appliance. Set on high speed until you have a smooth puree. Pour the blend into a clean large bowl and whisk in olive oil and tomato paste.

Cover the bowl and refrigerate for 2 hours minimum. Just before serving stir well to recombine ingredients. Ladle into a chilled tureen or large soup bowls.

Crime Thriller Romance and a Healthy Recipe

At my advanced age, a ‘mushy’ bottom pretty much comes with the territory. But to save your baked-goods from the same fate, there is a little trick you can use as a deterrent. Keep reading to find it.

Several months ago, I learned that victims of thyroid disorder, which I have been since the age of 16, should adopt a gluten-free diet. Carbs are also a problem for me. I looked around for a nutrition plan that would best suit my needs. I found it in the Keto Diet. A side benefit is that I am losing weight on this easy diet plan. Now when I look in the mirror, I see promise of the svelte and fit creature I was when young. It is a tremendous incentive to keep on keeping on.

A favorite gluten-free, low calorie, low carbs, high protein dessert that I stumbled upon by fooling with a recipe in Keto in 30 Minutes, edited by Jen Fisch of Ketointhecity.com, is one I call ‘Blueberry-Blackberry Cobbler’. I treat myself to a filling and satisfying 2-inch square of it drenched in icy-cold, Aldis’s Friendly Farms Original 30 calories per cup almond milk on many late evenings. Blue Diamond almond milk is also a good one. Neither of them is thick and greasy like Silk almond milk. Coconut milk works, if it is your preference. And no, this dessert will not go to your hips, unless of course, you gobble down the whole thing in one sitting.

Blueberry-Blackberry Cobbler
¼ cup gluten-cholesterol-sugar-free coconut flour
4 large eggs
4 oz. cream cheese, softened, I prefer Neufchatel, it contains less fat and has a tangy bite to it
1½ tsp. baking powder
¼ cup Erythritol or three packets of Stevia, plant-based, sugar-free sweeteners
1 tsp. vanilla extract (organic, if possible)
1 tbsp. lemon zest (I use four drops of ‘Young Living’ essential lemon oil)

Nonstick butter cooking spray
4 pats butter
¼ cup blueberries
¼ cup blackberries

Pre-heat oven to 425º F.

Combine all ingredients before cooking spray together in a mixing bowl.

Coat the sides and bottom of an 8-inch. x 8-inch baking dish with cooking spray.

Place a thin pat of butter in each corner of the baking dish. Set dish in the oven until butter melt, about 2 – 3 minutes.

The thick batter spoons nicely into the warm baking dish. Now here is the trick to avoid turning your cobbler into a ‘mushy-bottomed-mess.’ Rather than mix your fruit into the batter, spoon blueberries and blackberries onto the top of the batter. You can use any fruit you choose, but be careful, most fruits outside the berry family are high in carbs and will go to your hips.

Bake about 20 minutes.

I whip up this delicious dessert in the evening so I can cut myself a warm square of it right out of the oven. It is a yummy soother to a gnarling, late-night tummy.

Multi-award-winning author and artist Linda Lee Greene describes her life as a telescope that when trained on her past reveals how each piece of it, whether good or bad or in-between, was necessary in the unfoldment of her fine art and literary paths.

Greene moved from farm-girl to city-girl; dance instructor to wife, mother, and homemaker; divorcee to single-working-mom and adult-college-student; and interior designer to multi-award-winning artist and author, essayist, and blogger. It was decades of challenging life experiences and debilitating, chronic illness that gave birth to her dormant flair for art and writing. Greene was three days shy of her fifty-seventh birthday when her creative spirit took a hold of her.

She found her way to her lonely easel soon thereafter. Since then Greene has accepted commissions and displayed her artwork in shows and galleries in and around the USA. She is also a member of artist and writer associations.
